Traditionally made and lovingly matured by Long Clawson, this mature and mellow cheese is the pride of Shropshire, following a secret recipe. Rich orange in colour with distinctive blue veining and a golden crust, it is best accompanied by a good English Ale or, as with Stilton, by a rich fortified wine. Suitable for vegetarians.
