Description

Taken from the loin of our pasture fed lamb the rack is a tender and well marbled piece of meat which is suited to being roasted quickly. A guard of honour is 2 racks of lamb overlapping to create a 'guard' effect. A covering of fat will keep the joints crispy whilst the meat underneath will be soft and tender. Can be displayed interlocked once cooked to provide a centre piece to be jealous of.

About our sheep

Our sheep, like the cattle, live entirely off our traditional organic (chemical free) pastures. Our natural woodlands provide all the shelter they could need and our spring fed pools have a ready supply of fresh water.

Our breeding flock of sheep also live out on our pastures year-round. Grazing in synchronisation with the cattle promotes all varieties of grass (both tall and short) to be grazed allowing thick and vigorous growth to continue in our pastures all year. Our sheep especially relish Sheep’s Fescue, a grass which is rich in saccharine matter.

Our flock of sheep are a mixture of Mules and Suffolks and have their lambs at Fordhall each spring.
