Description

Boned and rolled brisket slow roast which is taken from the forequarter of our pasture fed beef. Brisket is a fattier cut which needs cooking (or smoking) slowly in order to render the fat correctly. Traditionally seen as an alternative to a beef topside for a Sunday roast which can be relatively stress free and left to its own devices to cook. Any leftovers can be used in quick midweek meals such as beef tacos, burritos or bao buns. Add in beef bones or beef stock to further infuse the flavour of the joint.

About our beef

Our outdoor reared cattle graze on our organic pastures throughout winter and summer with no additional grain. This is just one example of how Fordhall’s herd is set apart from the conventional. With no added fertilisers, no routine antibiotics or hormones, and no other animal feeds, our cattle grow and mature stress free as they would naturally.

A wholly grass fed diet has been proven to increase concentrations of the essential fatty acids Omega 3 and conjugated linoleic acid (CLA) in beef which play an essential role in metabolism.
